Perfect Quesadillas

One of my family’s staple favorites are these easy quesadillas. You can mix up the vegetables, change the cheeses, and use any assortment of meat (or not) and they turn out perfectly crispy and tasty every time! Take a few minutes and impress yourself and your family!

Ingredients

  • 2-3 lbs 2-3 Steak or Chicken

  • 1 Tbsp 1 Ghee or High Temp Oil

  • 1 1 Onion

  • 2 2 Bell Peppers Julienned

  • 1 1 Jalapeno Minced (optional)

  • 3 3 Cloves Garlic Minced

  • 1 1 Lime

  • Salt

  • Pepper

  • 1 1 Bunch Fresh Cilantro

  • Taco Seasoning to Taste

  • ¼ Cup ¼ Water

  • 1 ½ Cup 1 ½ Cheddar Cheese

  • 2 Cups 2 Mozzarella Cheese

Directions

  • Prepare steak or chicken by patting dry, adding salt and pepper. Set steak aside or refrigerate chicken.
  • Dice onion, julienne bell pepper, mince jalapeno, and garlic
  • Heat skillet with 1 Tbsp ghee or oil
  • Sear salted steak on both sides 2-3 minutes on high, or cook chicken to 165 on medium. Set aside.
  • Melt butter in hot pan, add garlic, onion, and bell pepper. Add salt and pepper.
  • Slice steak or chicken into small strips against the grain and mix back into vegetables.
  • Add taco seasoning and enough water to mix it well. (You may not need it all.)
  • Remove from heat.
  • Butter or oil the bottom of a skillet, on medium low heat. Place tortilla, cheese, fajita mix, more cheese on tortilla, optional jalapeno, and fold closed.
  • Heat on both sides for 2-3 minutes until golden brown.
  • Sprinkle with cilantro and lime juice, plate and serve!
