Ingredients

  • 1/2 cup butter

  • 3/4 cup onion, diced

  • 1 3/4 cup carrot, chopped

  • 4-5 cup broccoli (3-4 bunches) blanched and finely chopped

  • 3 1/2 cup cheddar, shredded

  • 1 cup extra sharp cheddar

  • 3 1/2 cup chicken broth

  • 2 cup milk

  • 2 cup heavy whipping cream

  • 1/2 cup flour

  • 4 tsp kosher salt

  • 1 tsp fresh cracked black pepper

  • 1 clove garlic, finely chopped

Directions

  • Prepare your vegetables, and blanch your broccoli in boiling water or steam for around 4 minutes.
  • Place dutch oven on medium high heat and melt butter.
  • Add onion and carrot, and turn frequently until onions are translucent and carrots are tender.
  • Add garlic, and stir until you start to smell it (around 30-60 seconds)
  • Whisk in flour, and stir continuously until it forms a roux. Cook for around 2-3 minutes.
  • Add broth slowly, while stirring, to avoid clumping.
  • Add in broccoli and simmer on medium low for 10-15 minutes, until broccoli is tender.
  • Add in heavy whipping cream and bring back to a simmer.
  • Reduce heat to low, and add cheese. Mix well, stirring until cheese melted.
