Easy No-Fail Pasta Dough

Hands down my favorite pasta dough recipe. I have made several different pasta recipes, and this is my favorite all around dough. I have used it on everything from spaghetti to ravioli. It is easy to make with an excellent taste and texture! If you have never tried making pasta, don’t be afraid to try new things in the kitchen, you might find something you really enjoy that is totally worth it. Pasta was certainly one of those things for me, and I am hoping it will be for you as well!

Ingredients

  • 1 1/2 Cup Semolina flour

  • 2 cup 00 flour

  • 4 Eggs

  • 3-4 Egg yolks

Directions

  • Sift flour together onto a clean surface to blend.
  • Make a well in the center and add your eggs and yolks.
  • With a fork, blend together until a dough begins to form, then knead until smooth (approx. 10 minutes)
  • Form into a ball, wrap in plastic wrap, and place on counter to rest for 30 minutes
  • Divide into quarters. Using one at a time, while covering the remaining portions, roll out dough on a floured surface (use semolina to dust)
  • Roll flat, letter fold, roll flat, roll out and fold again, then run through pasta attachment or hand roll until it is evenly then and almost opaque. You should be able to faintly see your hand under the dough. From here you can run through a cutting attachment or cut by hand! You can also use for ravioli or a filled pasta.

Notes

  • You may need to add more eggs at higher elevations. I have noticed that depending on the humidity I sometimes use the extra egg yolk, and when its lower they aren’t needed.
