Ingredients

  • 2 lbs Ground Beef

  • 1-2 Cans Chili, Kidney, or Black Beans

  • 1 28 oz Can Crushed tomatoes

  • 1-2 Cans Diced tomatoes

  • 2 Cups Beef Broth

  • 2 Tbsp Flour

  • 1 Onion

  • 3 Cloves Garlic

  • 1 Jalapeno pepper, diced small.

  • 1 Poblano pepper, diced small.

  • 1 Tbsp Tomato Paste

  • 2 Tbsp White Vinegar

  • 1 tsp Tabasco Sauce

  • Chili seasoning

  • Chili Seasoning
  • 1 Tbsp Chili Powder

  • 1 tsp Ancho Chile Pepper

  • 1 tsp Paprika

  • 1/2 tsp Red pepper

  • 1 tsp Black pepper

  • 1 Tbsp Cocoa powder

  • Toppings
  • Chives

  • Cheddar Cheese

  • Jalapenos

  • Fresh diced tomatoes

  • Lettuce

  • Sour Cream

  • Fritos/Corn Chips

Directions

  • Mix dry Chili Seasoning Spices.
  • Season ground beef with Salt and 1/4 – 1/3 of the dry seasoning mix
  • Brown ground beef in dutch oven, remove and set aside.
  • Add diced onion and peppers to rendered beef fat (add oil or butter if needed) and cook until peppers are tender and onion is translucent.
  • Add Garlic and cook until you begin to smell it (30-60 seconds).
  • Add Flour and mix until it forms a roux. Cook for 2-3 minutes.
  • Add Beef broth and deglaze.
  • Add crushed tomato, chili beans as desired, diced tomato as desired, and bring to a simmer.
  • Return ground beef to chili, add vinegar, and tabasco. Let simmer on low for at least 30-45 minutes. (It is worth the wait).
  • Our favorite way to eat it is pour on a bed of corn chips, top with lettuce, diced tomato, sour cream, cheese, and jalapeno.
