Ingredients
2 lbs Ground Beef
1-2 Cans Chili, Kidney, or Black Beans
1 28 oz Can Crushed tomatoes
1-2 Cans Diced tomatoes
2 Cups Beef Broth
2 Tbsp Flour
1 Onion
3 Cloves Garlic
1 Jalapeno pepper, diced small.
1 Poblano pepper, diced small.
1 Tbsp Tomato Paste
2 Tbsp White Vinegar
1 tsp Tabasco Sauce
Chili seasoning
- Chili Seasoning
1 Tbsp Chili Powder
1 tsp Ancho Chile Pepper
1 tsp Paprika
1/2 tsp Red pepper
1 tsp Black pepper
1 Tbsp Cocoa powder
- Toppings
Chives
Cheddar Cheese
Jalapenos
Fresh diced tomatoes
Lettuce
Sour Cream
Fritos/Corn Chips
Directions
- Mix dry Chili Seasoning Spices.
- Season ground beef with Salt and 1/4 – 1/3 of the dry seasoning mix
- Brown ground beef in dutch oven, remove and set aside.
- Add diced onion and peppers to rendered beef fat (add oil or butter if needed) and cook until peppers are tender and onion is translucent.
- Add Garlic and cook until you begin to smell it (30-60 seconds).
- Add Flour and mix until it forms a roux. Cook for 2-3 minutes.
- Add Beef broth and deglaze.
- Add crushed tomato, chili beans as desired, diced tomato as desired, and bring to a simmer.
- Return ground beef to chili, add vinegar, and tabasco. Let simmer on low for at least 30-45 minutes. (It is worth the wait).
- Our favorite way to eat it is pour on a bed of corn chips, top with lettuce, diced tomato, sour cream, cheese, and jalapeno.
